Only problem was we didn't have a lot of money, and since he and my mother decided to settle down in Indiana, the cost of getting tickets to the games on top of gas, food, etc. was more than we could handle. But being a great dad, Max Maclin was not going to let his son grow up not going to pro ball games, so I had to settle for Chicago White Sox tickets ($17 and we could sit nearly ANYWHWERE in the park, as they were not very popular back then and Comiskey was always empty). Then I remember one day with a big smile on his face, he told me the news that he was going to splurge and take me to my first Cubs game. That day at Wrigley was a great memory with him. Whenever I needed any advice or help with any problems in life, I have always been able to turn to him. Even when my father passed away 4 years ago, he traveled to Tennessee for his funeral, even though him and my real father were not all that close. He is such a hard worker and has always wanted to provide any and everything for the family. Even at the age of 65, he is still working after he retired from Chrysler. He now helps people who have trouble finding a place to live, have a residence for very cheap. He does this by purchasing homes and renting them out to people for very little. He also employess people who have less than stellar backgrounds have employment when most companies will not hire them. They help him maintain the homes and he pays them out of his own pocket. I love this man with all my heart and respect him more than he knows. This is why I feel that he deserves a night out of fun. He is on call all the time at work now because pilots that fly for the airline he works with are on strike and he never knows what is going to happen next with his job which is causing him to be super stressed out. My parents don't make alot of money but the one thing they want is to see me graduate from college and now what they want is for me to succeed in my young adult life and career. My dad is the most amazing guy! Loves his family with all of his heart! And puts his family first, for once i would love to put my dad first! He has helped me so much and with out him i would hate to think but I may not be on this world because of what my biological mother really wanted. I learned Dennis had broad shoulders for my adolescent teenage girl years and much LOVE for my mother and I. I was not accepting of a new father figure in my life and Dennis was not going to let me be fatherless. He became my softball coach the following year, He gave me my 1st family, he taught me to drive, he allowed me to make mistakes and gave me consequences...He LOVED me...My mother being diagnosed with Multiple Sclerosis in 1978 and the strongest women anyone will ever meet allowed Dennis and I to build our relationship at a pace that a 14 year old girl needed...VERY SLOWLY and with much CAUTION...My mother’s Multiple Sclerosis is only another amazing obstacle Dennis accepts when he became part of our family...Dennis is the hardest and most dedicated worker and provider, he is a wonderful example of a man, a father and grandfather...Now at 32, I have more Love for him then I ever thought possible...Never will my father be replaced but Today I can call Dennis my “father.” He is much deserving of some “father daughter time” I have not had the opportunity to express my gratitude for what he does and his sacrifices he has made for me. He has had a very long week and will have some long weeks to come, he works in construction and will be helping to fix many houses damaged by the tornado. He has volunteered much of his time to help the community. My dad is a huge fan of KISS and was a member of the KISS Army when he was in high school. His first concert was a KISS concert. I would love to take him to see them at the fairgrounds this summer. And for the last 20 years, he has been a crane operator. Some of my fondest memories growing up were spent with my dad in the fields, bailing hay, feeding and caring for the livestock. One of the things I love most about my dad is that he ALWAYS tells me he loves me. He loves his family, especially the grandkids ;) and is a good husband, father, brother, uncle, and friend. As a law enforcement officer, his schedule is not an ordinary 9 to 5 schedule, which can limit his time at home with the family and can make it difficult for him to attend some of the girls activities. However, despite his long and crazy hours, he always makes sure the girls, and I, are his number one priority. He goes out of his way to make holidays and birthdays special for us; but asks for nothing for himself and if you ask what he wants most of the time he says “nothing”. During the summer, he takes extra days off so we can take the girls to places like the Great Wolf Lodge, the lake, to see a movie, or sometimes just to be at home and have a family cookout. Being a father is not just a title but also a job he takes seriously and does to be best of his ability and beyond. Although he has two jobs, he might as well be unemployed due to the fact that he doesn't make enough money to pay for the bare necessities, let alone a house to live in. He is practically devastated because of this divorce, coupled with no money has made him incredibly stressed. All in all, one night out with a son that still lives in the Midwest would mean the world to him. Our KM decided to leave his post the day we opened. My Director of Kitchen Operations has put his blood, sweat and tears into becoming the binding glue that has kept this ship together. And, for that, I personally thank you, Luke Duncan. (father of twins and a new born shirking important family time to help right this ship)<br /><br />Matt Whisler, my GM, got up at 5 am this morning to do laundry. Nope, not his own. We went through so many towels and with Cintas closed on Sunday, we had to wash them ourselves. His fiance even helped him (I'm sure she is beginning to hate me like most others significant others on my management team).<br /><br />I have seen my staff step in from other restaurants to pull shifts, pick up supplies, deliver 500 lbs of ice and so much more. You all are paying customers, not just with money; but, with your time. You deserve to have the best of what we offer, not our mistakes. Unfortunately, they happen and it takes time to work through them. I can promise that we will always give 110% and work to be the best we can be. <br /><br />We almost doubled our projected sales. We actually ran out of hamburger tonight. A "Hamburger Joint" shouldn't run out of hamburger. Our transition from Patachou breakfast to Lakehouse Lunch has been tough for us to get under control. We will, however. No excuses. I've always told my team, I don't mind a mistake once. Learn from it, don't make the same mistake twice. <br /><br />We only get 1 chance to make a first impression. I hope those of you that didn't get the impression I would hope for, you give us a 2nd chance to make a better impression.<br /><br />I don't want to let this blog steer you in a direction that makes you think we have had a week of failures. We have not. In fact, it has been the best opening week I've experienced, working in this business as an owner for 14 years and in the industry in general for 20 years. But, as a perfectionist, one of my flaws is to want every minute of every day be impecable.<br /><br />I have high standards for myself, my team and my restaurants. I will not lower them. Fundraising began Saturday January 23rd and will continue through Saturday May 8th. All contributions will be donated to Pierre Garcon's association ‘Hoosiers Helping Haiti’. He flipped on one of his favorite programs, 60 Minutes, and became entrenched in a story about a school in Harlem. As it does many times a day, the light bulb went off in Scotty’s head – raise money for the Harlem Children’s Zone program.<br /><br />The Harlem Children’s Zone (HCZ) is a program that serves families, with a focus on children, in Harlem, NY. HCZ provides the community with workshops, schooling, and health programs. And, it is funded all by private donations.<br /><br />“They pay for performance.” Said Scotty Wise, owner of Scotty’s Brewhouse. “The newscaster tried to make it sound like a negative thing; but, he was answered with, ‘If I have a child with 100% perfect attendance and all A’s and B’s – do you think I care that it is financially driven?”<br /><br />This rang some bells in the head of the entrepreneur and restauranteur, Scotty Wise. Bribery isn’t a bad thing if the results are so positive.<br /><br />Scotty’s Brewhouse is going to help further this effort. On January 18, 2009, Martin Luther King Jr. Day, all Scotty’s Brewhouse locations will donate 10% of the day’s sales in food and drink to the Harlem’s Children Zone.<br /><br />This fundraiser is one of the few that Scotty’s Brewhouse has supported that has not been locally based. <br /><br />“Scott was touched so much by the special he watched that he just had to get involved,” said Amber Martin, Beverage and Promotions Director.<br /><br />In 2009, Harlem Children’s Zone helped 17,896 people and 10,462 of those were youth. <br />It costs about $3,500 to serve one child, so the HCZ is always looking for ways to raise money in order to reach out to more of their community and beyond. <br /><br />“The classroom sizes are smaller so the attention is greater for the child. There is more male leadership, which is needed. And, my favorite,” said Wise, “it is private funding, so there is no bureaucratic, government B.S. that public schools have to dance around.”<br /><br />Recently, the Harlem Children’s Zone program spirit has gone national and is starting to be used in other poverty ridden areas in the U.S. including Philadelphia, Miami, and Chicago.<br /><br />So celebrate Martin Luther King Jr. by helping those who are less fortunate than you just by coming in and eating good food. We sold $1200 before the store opened. Kylie was driving to deliver her order in the terrible snowstorm that has just hit central Indiana that morning when she got an unexpected phone call from her sidekick Jeny.<br /><br />“There has been an accident on I-65 and there are trucks turned over and everything,” Jeny began to explain “and I might need your help getting this order to where it needs to be.”<br /><br />Jeny had left an hour and a half early for her half hour drive, just in case something like this came up.<br /><br />Jeny had called our drug rep. He went to Houston and worked briefly as a copywriter and a bartender. <br /><br />Finding more pleasure from the bartending job than copywriting, Wise returned to Muncie where his family lived. <br /><br />With the support of his family, Wise purchased a bar near the Ball State campus and, at age 22, became a business owner. The bar, named Scotty’s Brewhouse, instantly brought out his passion for the restaurant business. <br /><br />The menu at Scotty’s was straightforward with a selection of burgers, sandwiches and other items. Wise included items that he had enjoyed over the years while on vacation in various locations. The menu has grown radically since those early days, but the original dishes remain. <br /><br />The napkins were, and still are, terry cloth hand towels. When asked about the napkins, Wise explained, jokingly, that perhaps he’s a messy eater. <br /><br />Actually, he had seen towels used in a restaurant in Hilton Head several years earlier and liked the style. <br /><br />After his initial success with Scotty’s Brewhouse in Muncie, Scott Wise opened a second restaurant called Lucy!Lucy! <br /><br />Unfortunately, this restaurant was a total failure, although a vast amount of knowledge was gained from the experience Wise mentioned. <br /><br />Any other business owner might have become a bit gun shy, but luckily for Bloomington, Wise tried again. Opening the first restaurant in town after the new smoking ban took effect in 2001, Scotty’s Brewhouse on North Walnut Street has become part of the downtown restaurant landscape. <br /><br />Due to the success of the Bloomington restaurant, the nonsmoking ban became a company policy. Scotty’s became a favorite in Bloomington for casual dining especially for Chicago Cubs fans, where the games are always on. <br /><br />Scotty’s Brewhouse has since expanded to Lafayette in 2004, and Indianapolis, on the north side in 2007, and downtown early in 2009. A new location, with a slightly different concept will be opening this year at the Geist reservoir. The new restaurant will be an upscale burger bar with an emphasis on locally grown produce. <br /><br />Scotty’s restaurants have a polished feel but remain local. The management team has been together for over a decade, an accomplishment Wise is very proud of. <br /><br />The kitchen staff at each location participates in the creative process, regularly creating items for consideration on Scotty’s permanent menu. <br /><br />The most popular dishes at Scotty’s are the fried dill chips, buffalo wrap and the Lucy burger. Each restaurant has a slightly different customer base, with Bloomington patrons ordering more vegetarian friendly options and favoring local products. <br /><br />In 2009, Scott Wise was named Restaurateur of the Year by the Indiana Restaurant Association. Wise downplays his award, reminding me that he is only as good as his team. He regards his employees so highly that he sends them each a thank you note on their annual anniversary date. <br /><br />Philanthropy has become an important mission for Scott Wise, expressing his belief that businesses should have a social conscience. Over the years, these activities have become more important and have taken on a more personal meaning. <br /><br />Scotty’s has participated in Toys for Tots at Riley Children’s Hospital for many years. For the past five years, Scott Wise and his staff deliver the toys personally, visiting with each child during the holiday season. In 2009, Scotty’s teamed up with Ghyslain Chocolatier in Union City to create Red Wagon Hot Chocolate. Scotty’s donates $1 from every cup purchased to Riley Hospital for Children. <br /><br />Scott Wise has plans for Scotty’s Brewhouse in Columbus, Ohio, and Chicago. He will be bringing his interpretations of flavorful, casual dishes into those competitive markets. Note: This recipe makes enough chili for the Scotty’s restaurant crowd. Stir in veggies, beef and all the spices and saute together for approximately 10-15 minutes. <br /><br />Heat veggie broth (4.5 quarts water and veggie base) and add potatoes. Bring to a boil. <br /><br />Add broth and potatoes to beef and veggies and let it simmer over medium heat. <br /><br />Melt the remainder of the butter in a saucepan and then stir in flour. <br /><br />Add milk and stir until smooth, keep stirring until thick. <br /><br />Stir milk and flour mixture into soup thoroughly. In my guestimation, the phenomenon known as Social Media has only been around for 3 years, max. And, that’s if you were really savvy and jumped on the bandwagon early. I’m not even going to single out any group of people that I see this come from the most… I’m just generalizing. If you don’t like my Tweets, don’t follow me – it is really pretty simple. Since they don’t offer a degree in Social Media, I’m going to say you are no more of an expert than my 2 year old son. It is just 140 characters of whatever YOU want to talk about and whomever CHOOSES to read it. That’s it.<br /><br />I’m not even talking about sex, religion, race or any other controversial topics. No, as a restauranteur, I keep my posts closest to my heart’s love and that would be food, drink and sport.<br /><br />Does Social Media blur the lines for professionals? Well sure. Just as much as false Wikepedia entries or any other “internet research,” the world wide web is full of poisonous spiders. Aren’t journalists always supposed to have more than one source to back up facts? Same thing applies with Social Media. You don’t have to base fact upon one person’s opinion or tweet. <br /><br />Lately I’ve been reading “reviewers” and “bloggers” disagree with a new form of marketing for restaurants called TasteCasting. I have read that they should be using AFJ guidelines when “reviewing” a restaurant. However, these are not “reviews” and should not be marketed as such or confused as such. At this infancy stage of growth for TasteCasting, the guidelines set forth are described as (from tastecasting.com) “…a team of socially networked, and social media savvy people that establishments invite to attend a complimentary tasting. In exchange the TasteCasting team broadcasts to their collective network of friends, followers and linked connections using Twitter, Facebook, Linkedin, YouTube, WordPress, Flickr and more…”<br /><br />I don’t believe any TasteCaster is encouraged to lie or bend truths if they don’t enjoy an entrée, service or the environment. I believe the restaurant is still held accountable. I’m sure free food skews an unbiased review and, from the restaurant owner’s table, it is much easier to prepare for a group that is doing this KNOWING when they are coming vs. a traditional review. But, the point is, these are not professional reviews and are not seen as such. I would bet that a professional journalist or food critic has many different followers/friends than a TasteCaster. Therefore, the information being sent by the TasteCaster is more marketing and opinion than they type of information that may be sent by a professional food critic.<br /><br />In my opinion, TasteCasting is a great, beneficial resource for restaurants in an economy that has taken most traditional forms of expensive media spending out of our reaches. If you think that these events blur or threaten your expertise, then don’t read them. If you think these events confuse the average consumer or palette of the dining guest, then it is your job to educate them as such.<br /><br />Personally, I don’t listen to critics – I like to form my own opinion on everything from food, to wine, to movies. Recently Scotty’s mac and cheese with bleu cheese crumbles and Cajun spices was ranked in the elite 8 of Best of Indy’s ‘Macaroni and Bleu,’ along with such restaurants as St. Elmos and the Scholars Inn.<br /> <br />“We decided to go with macaroni and cheese [as the contest] because there are so many interesting varieties in Indianapolis. Gourmet mac and cheese has been a trend for the past several years, and we wanted to put those offerings against the tried-and-true traditional versions around town. Our high scorers ended up being a diverse group, with everyone from 14 West to Scotty's to Jacquie's Catering,” said Courtney Leach, Editor of Indianapolis Dine.<br /><br />In order to be considered for the contest the recipe had to be an original and not ordered from a supplier. Each entry made to the Best of Indy’s ‘Macaroni and Bleu’ contest was awarded a score based on flavor, appearance, texture and more.<br /><br />“The creamy bleu cheese adds flavor and texture, and the Cajun adds a nice bite [to the recipe],” said Luke Duncan, Scotty’s Brewhouse Director of Kitchen Operations.<br />“Winning this award is a nice nod to the fact that simplicity mixed with great ingredients can beat some fancy pants stuff,” said Duncan. <br /> <br />Macaroni and cheese was a part of most every child’s youth. The comfort feeling of “home cooking” can be tasted while spooning in the cheese-filled pasta shells.<br />“Personally, I think it has to either be an exceptional version of the homestyle mac and cheese we all grew up on, or it has to be a gourmet version that still appeals to the every day diner. This year Scotty’s Brewhouse is running a “Think Pink, Drink Pink,” campaign to coincide with October’s Breast Cancer Awareness month.<br /><br />In October for every $9 Lucy’s Cosmo purchased, $1 of every drink sold will go to the Susan G. Komen Foundation. <br /><br />“We decided on the Lucy Cosmo because it is one of our most famous drinks, and of course because it is pink,” said Amber Martin, Scotty’s Brewhouse Beverage and Promotions Director.<br /><br />Scotty’s will also be selling shirts that adorn the breast cancer ribbon and the slogan “proud in pink, until there’s a cure.” The creative team behind the Brewhouse apparel also made a men’s shirt with the slogan, “Real Men Wear Pink.”<br /><br />“We had so much demand for these in the past, that we are bringing them back,” said Martin.<br /><br />The shirts are available in S-XXL and run $20 a piece. $5 from every regular priced shirt sold will be donated to the cause. There are other ways to get involved with this organization such as volunteering, joining their e-newsletter, or just increasing awareness of breast health issues among those you know.<br /><br />“We would like [Scotty’s Brewhouse Customers] to remind everyone they know to get their annual mammogram and support the cause by supporting the organizations that are raising money,” said Dana Curish, Executive Director of the Susan G. Komen Indianapolis Affiliate.<br /><br />“I decided I wanted to do something for this cause because breast cancer has such a wide-reaching effect on almost every person in the country. My grandmother had breast cancer and a mastectomy. Knowing that cancer is very hereditary, I am trying to promote a lifestyle of awareness and prevention. I think that the National Breast Cancer Research Foundation has done a great job promoting October as the month to give attention to this cause,” said Scott Wise, owner of Scotty’s Brewhouse. <br /><br />One in every eight women will be diagnosed with breast cancer throughout their lives. Do you remember where you were when you heard or watched it all happening? That's always the question asked.
Scotty's Brewhouse had been open for 5 years in Muncie. We had been open in Bloomington for 2 years. Tuesdays were the day I held a weekly office management meeting. Every Tuesday, 8 am. I'm the kind of person that needs background "white" noise to keep me sane. I don't watch the tv or listen to the radio; but, I need it on just as a distraction. This being said, my desk and I faced the bleary, red-eyed, tired managers listening to me discuss the upcoming Ball State Homecoming Parade and some kind of all-u-can-eat wing special I wanted to introduce. Their backs were to the tv across the room in my office. The discussion on which beer to run on special ended abruptly. In a matter of minutes, it really didn't matter that our servers were not cleaning their tables fast enough… thousands of people had just died.
You know how you think back to "flashbacks" in your life and you remember little snippets, like a little piece of a movie? That's how I remembered that day, I can remember peering over one of my managers heads, seeing the tv screen and wondering, "what the hell did that plane just crash into a building for?" I remember the rest of the day was so "dreary and foggy." It felt like the feeling you had as a kid when you couldn't find your mom or dad in the grocery store or mall. You felt lost, with no hope. The person or thing that is supposed to protect you and hold you when you are scared, was gone. That's how I felt that day. I felt like Mom/Dad United States couldn't protect us, we didn't know what was happening, where it was happening next or why. That feeling of desperation and fright will stick with me forever.
There's another reason why I will never forget 9/11. It's my birthday.
I've never been sad to share this day with those that lost their lives. For God's sake, I'm still alive and celebrating life, how could I be upset about that. At first, I hated giving my birth date to people on the phone, or in the airport, for credit card authorizations or the like. People always said, "I'm sorry." Sorry for what, I thought? I'm not sorry. I'm proud. I'm proud to remember those people every year. It is not my day, it is theirs. Hell, birthdays lose their fun after the age of 21 anyway. And, very few of my friends forget my birthday now. The fact that it is tied to one of, if not the, worst tragedies in American history… more than 3000 people will never celebrate a birthday again.
I love to shop. Always have. Always will. I love clothes and fashion. Might have been the 2 sisters and no brothers that did that to me. And, I love New York. The shopping and dining capital of the world.
My mom, dad, wife and I would take a trip to New York every Fall to shop and see a Broadway show to celebrate my birthday. We had our annual trip planned for late September that year of the tragedy. We all talked and decided, if they are letting planes fly into NYC, we will still go. New York needed the support of tourists at that time more than ever.
I will tell you what, I will never, ever forget that trip. The smells, the sights, the sounds... all etched in my memory forever. From the armed guards and dogs at the airport, to talking to people in the stores. I would ask people if they felt comfortable talking about it, to tell me where they were, what they saw, what were they feeling now. I heard stories of brave men and women helping each other. I heard stories of fear. I saw tears and sometimes, no words. One person told me that they just started running across the bridges covered in soot, dust and crying…. not knowing where they needed to go; but, just away from the blast.
We decided to go visit one of the fire stations that lost many men and women in the tragedy. In front of the fire station were banquet tables set out covered with pictures of the fallen, candles burning, flowers and cards all over the walls of fire station… There were cards from school children from all over the United States. As I was looking and watching and thinking and crying, I didn't notice but one of the firemen was behind me watching us. He was tall, burly and looked tired. I turned around and walked up to him, stuck my hand out and pulled him into me with a warm embrace. I just told him, "we are here for you." As I pulled away and wiped my tears, I watched him cry and walk away.

Why? Well, the right lane merges into the left lane in about 200 yards. This happens many times a day, as this is my route home. So, I am very accustomed to what is about to happen. But, nonetheless, it still drives me abso-fucking-lutely bonkers every time.<br /><br />I glance over to the right and I see Cowboy Bob in his pick up truck. His dog "Skeeter" is in the back. His wife sits beside him touching up her 3 foot thick foundation of makeup, while spraying a fresh coat of Aqua Net Hairspray into her State Fair hair.<br /><br />Cowboy Bob looks over at me while chewing on a tumbleweed and tips his hat. This is a sign that it's "Go Time." It's time to play a little game of chicken. So, like all men in my family that posses a common trait called ROAD RAGE, I floor it and give him no room to squeeze into my lane. For fuck's sake, he knew his lane was merging, he call fall behind. I win this round; but, like I said, this scenario plays out many times a day. Depending my mood and how the day went, decides whether I turn into Tony "Scotty" Stewart, or Ja-Ja-Ja-Ja-Jimmy Stewart.<br /><br />If you are over the age of 80, I'm not shittin' – YOU need to turn in your driver's license. Either that, or you have to use the pedal on the right. It is called the "gas" pedal. Use it!<br /><br />If you drive on the highway, I have 2 BIG rules that everyone needs to start using:<br /><br />1) <br />Use your Cruise Control damn it! You people that drive up on my ass, I get over to let you pass and then you decide to let up and let me drive right up on you… for God's sake man, if I didn't have a son to take care of I would like to just drive right into your ass like Kobe in Colorado!<br /><br />2)<br />Do not sit in the left lane. This is the FAST lane. It is your duty as an American to get over to the right and let me pass you. I don't care if a Semi is 300 yards away, let me get around you. You can come back over and clog up the highway after I zoom past.<br /><br />SIDENOTE: all police officers reading this, remember that Scotty's Brewhouse offers uniformed officers 25% off, daily. I also only drive the speed limit. If you still aren't impressed, then go back to eating your donut, Ponch. <br /><br />A few other miscellaneous peeves:<br /><br />Unless you want a serious case of whiplash, use your turn signal. GMC put it on your car for a reason.<br /><br />If you are in a convertible and you have the top down, why do you put the windows up? If it is to protect your hair, it is too windy or too hot/cold – then put the top back up dildo.<br /><br />If you have a bumper sticker that says something like, "My kid is on the Honor Roll at…" I've given Slater permission to kick your kid's ass when he is in school.<br /><br />Please don't put more than 2 bumper stickers on your car. (allowing for a Scotty's sticker and a Colts sticker).<br /><br />If you are shopping at Marsh or picking up some treats for Spot at Petsmart, do me a favor. Just respect the fact that I'm in a 3000 pound machine that could make you look like a Bloody Mary Pancake. I'm gonna' let you walk by; but, just be a little respectful about it. Maybe a little wave to say thank you. Or, maybe that fake "run/walk" where your legs still go the same speed; but, your arms are moving quicker – to give the illusion that you are walking quickly to get out of my way.<br /><br />Alright, I'm sure I'll think of more as I drive around today.
